Founded in 1860 in Sabae City, Fukui Prefecture, Katoukichibee Shouten traces its roots to a money‑changing and village leadership business before shifting to sake brewing under the Kichibee family name. Today in its 11th generation, the brewery is led by Atsuhide Kato, who took over leadership at age 18 and instilled a vision of crafting sake without additives—pure Junmai using only rice, water, koji, and their proprietary yeast.
The sake label "Born" is pronounced "Bon" in Japanese. However, for international branding, the brewery stylizes it as "Born"—a phonetic approximation that also carries symbolic meaning in English. In Japanese, it symbolizes purity, the divine, or transcendence—qualities the brewery wants to express in their sake.
Born Junmai 55 opens with a subtle yet refined aroma of melon and toasted nuts. On the palate, it delivers a smooth, balanced experience with gentle notes of pear, apple, and coconut water, layered over a delicate umami richness from the rice.
